Ingredients

  • Avanti Delights Raw Shrimp – 250g
  • Basmati rice – 1 cup (soaked for 20–30 minutes)
  • Onion – 2 medium (thinly sliced)
  • Tomato – 1 large (chopped)
  • Green chilies – 2 (slit)
  • Ginger-garlic paste – 1 tbsp
  • Curd (yogurt) – 3 tbsp
  • Turmeric powder – 1/4 tsp
  • Red chili powder – 1 tsp
  • Biryani masala / Garam masala – 1 tsp
  • Mint leaves – 1/4 cup
  • Coriander leaves – 1/4 cup
  • Whole spices – 1 bay leaf, 2 cloves, 1 cardamom, small cinnamon stick
  • Lemon juice – 1 tbsp
  • Oil – 2 tbsp
  • Ghee – 1 tbsp
  • Salt – to taste
  • Water – 2 ½ cups

Cooking Instructions

Step 1:
Boil 2 cups of water, add soaked rice and a pinch of salt. Cook until 80% done, then drain and keep aside.
Step 2:
Heat oil and ghee in a pan. Add whole spices. Then add sliced onions and sauté until golden brown. Add ginger-garlic paste and cook until raw smell disappears.
Step 3:
Add tomatoes and cook until soft. Add turmeric, red chili powder, and biryani masala. Mix well.
Step 4:
Add prawns and cook for 2–3 minutes. Add curd, mint, coriander leaves, and 1/2 cup of water. Cook for 3–4 minutes until slightly thick.
Step 5:
In the heavy-bottom vessel, make a layer of 1/3 of the cooked rice at the bottom, spread the prawn masala evenly, then layer the 2/3 remaining cooked rice on top.
Step 6:
Cover with lid and cook on low flame for 10–15 minutes (Dum method).
Step 7:
Switch off the flame. Sprinkle lemon juice and gently mix before serving.

Serving Suggestion

Serve as Hot, Pair with Onion Raita or mint chutney, along with Sliced onions and Fresh lemon wedges.
